A Traditional Favorite: Peach Cobbler

Few desserts speak to the sentiment of “southern comfort” like the popular traditional favorite, Peach Cobbler. The American Cobbler is a deep-dish dessert with a thick crust and a fruit filling. The recipe’s UK predecessor often offered an option made with savory meats. In the US, most recipes feature a biscuit crust and a crumb or a drop-biscuit topping. More modern adaptations often implement a top and bottom pie crust instead.

When the first settlers arrived in America, they brought their favorite recipes with them, like fruit pies and English steamed puddings. Early attempts to recreate the dishes they loved were challenging with the primitive cooking equipment available. With no brick ovens available, they baked the fruit cobblers in pots over an open fire. They first made a filling of of locally harvested fruit and placed it in the pot. next, they added dough over the filling and covered the pot. As the cobblers cooked, the filling stewed and created its own sauce, while the pastry rose and crusted.

The early colonials loved cobblers because they were both nourishing and sustaining, and could feed large numbers of people. They were originally served as the main course for supper and for breakfast. Later, in the 19th century as a greater variety of foods and ingredients became available, cobblers made the transition to becoming primarily a dessert dish.

In recent years, chefs everywhere have been experimenting with new and exciting ways to add a twist to this time-honored classic, without taking away from its traditional appeal. At Tazza, our unique interpretation adds cinnamon, walnuts, and caramel sauce, served warm and topped with a rich mound of vanilla bean ice cream. Nashville TN Okra

What exactly is Nashville TN Okra?

TN Okra is a flowering plant that is in the mallow family and is valued for its edible green seed pods. The yields of the seed pods contains a usable form of soluble fiber. When the Okra is cooked, a slimy substance forms. This is minimised by cooking the pods intact briefly. Cooking with acidic ingredients such as a few drops of lemon juice, tomatoes, or vinegar may also help. Alternatively, the pods can be sliced thinly and cooked for a long time so the mucilage dissolves. The immature pods can also be pickled. The Okra leaves may be cooked similar to beets or dandelions’ greens too. The Okra seeds can also be roasted and ground for coffee. Okra is considered as a health food due to it being high in fiber, vitamin C, folate, antioxidants, calcium and potassium.

Nashville TN Chili Con Queso

What exactly is Chili Con Queso?

Firstly, “Chili Con Queso” is Spanish for “chili with cheese”. It is sometimes referred to as just plain Queso, and it is an appetizer or side dish served in restaurants. Chili Con Queso is basically a smooth and creamy, melted cheese and chili pepper sauce. The melted cheese can be a blend of Velveeta, Monterey Jack, Cream cheese, or other processed cheeses. The chili pepper can be in the form of a canned tomato and chili pepper mix, otherwise it can also be freshly prepared. Other added ingredients used are pico de gallo, black beans, guacamole, and ground beef or pork. This sauce is typically prepared to be used with nachos, tortilla chips, tacos, fajitas, migas, enchiladas or any other Tex-Mex dishes, or even just for dipping.

Nashville TN Catfish Filet

Catfish is found in freshwater, and it mainly lives in rivers and lakes. Today’s catfish is also farm-raised in Mississippi, Louisiana, and Arkansas. It is a very unappealing fish to look at, but the flesh is white, delicate, and has a mild flavor. Catfish is often breaded and fried, as well as cooked with a Cajun seasoning.
